and Carrot Casserole with Feta and Parmesan"},"content":{"rendered":"<p>Slowly but surely I am getting back into the groove of making a proper dinner. \u00a0This dish has a pretty quick prep time and you can even put it together earlier in the day and bake it later. \u00a0It can be a side or your main dish. \u00a0So even on a busy weeknight you can have dinner together without much fuss. \u00a0And you can use up any summer squash you might have around!<\/p>\n<p>Once at a pot luck dinner\u00a0a friend brought this amazing, creamy, cheesy squash casserole. \u00a0She described the ingredients to me, but I never got the entire recipe. \u00a0When I saw this squash casserole on Pinterest I had to give it a try because it looked so similar. <a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/09\/zucchini1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-6472 size-full\" casserole is different. \u00a0Less creamy and cheesy, more focus on the vegetables, which is really nice. \u00a0It&#8217;s flavorful, clean tasting, and delicious. \u00a0One of the main differences is that this one doesn&#8217;t use condensed cream soup, something I really have nothing against, but something that I don&#8217;t mind finding a replacement for if I can. \u00a0The original recipe calls for eggs and sour cream as the binders. \u00a0I used the eggs, but substituted greek yogurt and it turned out really well.<\/p>\n<p>The feta gives a nice punch to the dish. \u00a0I mixed in some shredded carrots to add extra veggies and to help with some fridge clean out. \u00a0This is a really great side dish. \u00a0I served it with grilled pork tenderloin and bread.<\/p>\n<p>The thyme is a great herb here, you can use fresh or dried. \u00a0I used a mixture of green and yellow squash, but you can use all of one type of course. \u00a0And something I think I might try next time is using \/><\/a><\/p>\n<h3>Squash and Carrot Casserole with Feta and Parmesan<\/h3>\n<p>Adapted slightly from <a href=\"http:\/\/www.mykitchenescapades.com\/2012\/07\/feta-parmesan-zucchini-bake.html\" target=\"_blank\">Kitchen Escapades<\/a> Serves 4-6 as a side dish <em>Ingredients<\/em><\/p>\n<ul>\n<li>5-6 squash (mix of zucchini and yellow squash) sliced<\/li>\n<li>3-4 grated carrots<\/li>\n<li>olive oil<\/li>\n<li>4 cloves of garlic, minced<\/li>\n<li>1 tablespoon of fresh thyme (or 2 tsp dried)<\/li>\n<li>2 eggs<\/li>\n<li>1 cup greek yogurt<\/li>\n<li>heaping half cup of crumbled feta<\/li>\n<li>1\/4 cup grated parmesan cheese<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>In a large saucepan heat a drizzle of olive oil over medium high heat.<\/li>\n<li>Add in the squash and cook for a few minutes. \u00a0Add in the carrots and garlic and cook, stirring to keep the garlic from burning, until the squash just begins to soften. \u00a0Season with salt and pepper and remove from the heat.<\/li>\n<li>In a medium bowl whisk eggs and yogurt, then stir in the feta and parmesan. \u00a0Season with a little salt and pepper.<\/li>\n<li>Spray a baking dish with cooking spray and layer half of the squash in the pan. \u00a0Spread half of the yogurt mixture on top, then layer again with squash and then yogurt. \u00a0Sprinkle with a little extra feta if you have some!<\/li>\n<li>Bake for 45 minutes until top is golden brown. \u00a0Serve warm. \u00a0This reheats well for a light
