a Choux Funnel Cakes"},"content":{"rendered":"<p>It&#8217;s fair season! \u00a0Unfortunately it&#8217;s looking more and more likely that we won&#8217;t be able to make it to the State Fair of Texas up in Dallas this year. \u00a0But that isn&#8217;t going to stop me from bringing the fair home!<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/10\/funnelcake2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-6571\" \/><\/a><\/p>\n<p>Let&#8217;s be honest, everyone looks forward to going to the fair to enjoy some fried food. \u00a0Corn dogs, fried oreos, fried maragritas, and of course funnel cakes. \u00a0My fondest memories of funnel cakes are not actually enjoying them at the fair but at <a href=\"http:\/\/www.schlitterbahn.com\/\" target=\"_blank\">Schlitterbahn<\/a> after a day in the water and sun with my summer league swim team. \u00a0I&#8217;d go get one just as the sun was beginning to dip down and they were about to close down for the day. \u00a0Something about the hot crunchy dough pieces covered in a thick layer of powdered sugar still makes me smile.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/10\/funnelcake1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-6570\" \/><\/a><\/p>\n<p>I&#8217;ve never made funnel cakes before. \u00a0I don&#8217;t have a deep fryer and don&#8217;t really like to fry food in my kitchen. \u00a0It makes a mess and then there&#8217;s the issue of dealing with all that oil when you&#8217;re done. \u00a0Surprisingly these didn&#8217;t spatter and create a mess and I found <a href=\"http:\/\/www.wikihow.com\/Dispose-of-Cooking-Oil\" target=\"_blank\">these great tips<\/a> for how to dispose of or save your cooking oil. \u00a0There might just be more frying in my future.<\/p>\n<p>The dough is pate a choux, the same dough used to make cream puffs and eclairs. \u00a0It is an eggy dough that bakes up nice and puffy. \u00a0It sounds fancy, but isn&#8217;t at all complicated.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/10\/funnelcake8.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-6577\" \/><\/a><\/p>\n<p>Instead of a funnel a plastic bag is used to pipe the dough into the oil. \u00a0Cut a smaller hole than you think you need from the bag. \u00a0You can always cut a bit more if you need, but if you cut it too big you&#8217;ll have to transfer the dough to a new bag and start over. \u00a0That happened to me.<\/p>\n<p><a \/><\/a><\/p>\n<p>While I had grand plans to make all of these the same size I wound up with a wide variety of sizes and shapes. \u00a0But they all tasted equally as delicious! \u00a0These are best eaten immediately so be sure to have some hungry folks (toddlers are good funnel cake eaters!) to help you enjoy these tasty treats.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/10\/funnelcake3.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-6572\" \/><\/a><\/p>\n<h3>P\u00e2te a Choux Funnel Cakes<\/h3>\n<p>From <a href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/funnel-cake-recipe.html\" target=\"_blank\">Alton Brown<\/a><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>1 cup water<\/li>\n<li>3\/4 stick butter (6 tablespoons)<\/li>\n<li>1 tablespoon sugar<\/li>\n<li>1\/8 teaspoon salt<\/li>\n<li>1 cup flour<\/li>\n<li>1 cup eggs, about 4 large eggs and 2 whites<\/li>\n<li>Vegetable oil, for frying<\/li>\n<li>Powdered sugar, for topping<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>In a medium sized saucepan bring water, butter, sugar and salt to a boil over high heat.<\/li>\n<li>Once it boils add the flour and lower the heat to medium low. \u00a0Stir with a wooden spoon until dough forms a ball and a film forms on the bottom of the pan. \u00a0Remove from the heat and transfer to the bowl of a stand mixer. \u00a0Let cool for about 5 minutes.<\/li>\n<li>With mixer on low speed add the eggs, one at a time, making sure to wait until the egg is incorporated before adding the next.<\/li>\n<li>Once all the eggs have been added transfer dough to a large plastic bag.<\/li>\n<li>Heat oil in a saucepan, about 1 1\/2 inches deep, to 350-375\u00b0F.<\/li>\n<li>Cut a small corner from the bag and pipe dough out in a circular\/swirling pattern, making the cake as big or as small as you like. \u00a0Let cook for a minute or two, depending on the amount of dough used, then flip and cook until desired doneness. \u00a0I like mine a little darker, but you may prefer them lighter.<\/li>\n<li>Remove from the oil and drain on paper towels before dusting with powdered sugar.<\/li>\n<li>Repeat with the rest of the dough, making sure your oil is kept between 350 and 375\u00b0F. \u00a0Too cool and the dough absorbs too much oil, too hot and it burns. \u00a0Increase and lower the heat as needed to keep it in the sweet spot.<\/li>\n<\/ol>\n<div
