So. Good.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2015\/01\/esterhazy7.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full \/><\/a><\/p>\n<p>I made this cake over 2 days, which is what Jelena said to do and I&#8217;d recommend you do as well. \u00a0It could be done in a day if you started in the morning, though. \u00a0I made both the cakes and the filling on the first day and assembled it on the next. \u00a0I left the cakes at room temperature (uncovered) and the filling I refrigerated overnight. \u00a0The next day I let it come to room temperature, and then whipped it up before using it.<\/p>\n<p>The original recipe makes a 10 inch torte with 4 layers. \u00a0I halved the recipe mainly because it calls for almost 5 cups of ground hazelnuts and I didn&#8217;t have enough. \u00a0But this 4 inch darling is the perfect size when you&#8217;re not making this for a crowd but just for few people. \u00a0A halved recipe yielded 9 4-inch layers. \u00a0I originally intended to use them all, but after stacking up 6 I thought it was tall enough. \u00a0I also wouldn&#8217;t have had quite enough filling for 3 more layers. \u00a0The recipe below is halved, so double it to make a larger cake. \u00a0The layers will need longer to bake as well, about 15 minutes.<\/p>\n<p>Whenever I make something like this I wonder why I don&#8217;t do it more often! \u00a0It&#8217;s time consuming for sure, but it is so fun to see the different components come together. \u00a0And the rewards are great.<\/p>\n<p>Begin with the \/><\/a><\/p>\n<h3>Esterhazy Torte<\/h3>\n<p><em>Ingredients<\/em><\/p>\n<p>Hazelnut Cake Layers<\/p>\n<ul>\n<li>6 egg whites<\/li>\n<li>1\/2 cup + 1 1\/2 tablespoons sugar<\/li>\n<li>1\/2 vanilla bean<\/li>\n<li>1 1\/4 cup ground hazelnuts<\/li>\n<li>1\/3 cup flour<\/li>\n<\/ul>\n<p>Hazelnut Filling<\/p>\n<ul>\n<li>6 egg yolks<\/li>\n<li>1\/2 cup + 1 1\/2 tablespoons sugar<\/li>\n<li>1\/2 vanilla bean<\/li>\n<li>11 tablespoons butter, softened<\/li>\n<li>3\/4 cup ground hazelnuts<\/li>\n<\/ul>\n<p>White Icing<\/p>\n<ul>\n<li>1 1\/2 cups powdered sugar<\/li>\n<li>1 1\/2 teaspoons vegetable oil<\/li>\n<li>3-4 tablespoons hot water<\/li>\n<\/ul>\n<p>Chocolate Icing<\/p>\n<ul>\n<li>2 ounces chocolate, chopped<\/li>\n<li>1 teaspoon vegetable oil<\/li>\n<li>1\/2 cup roughly chopped toasted hazelnuts<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<p>Cake Layers<\/p>\n<ol>\n<li>With an electric mixer beat the egg whites while gradually adding the sugar for about 5 minutes until stiff peaks form.<\/li>\n<li>Turn the mixer to the lowest speed and add in the hazelnuts mixed with the flour and beat until just combined.<\/li>\n<li>Line 2 baking sheets with parchment. \u00a0Use a 4-inch plate or cookie cutter to trace 4 circles per sheet.<\/li>\n<li>Turn the paper over and delicately spoon the batter evenly into the circles.<\/li>\n<li>Place the tray into an preheated 325\u00b0F oven and bake for 10\u00a0minutes. \u00a0It will look soft but that is what you want. Your finger should not stick to the layer when you touch it.<\/li>\n<li>Take the layer out together with the paper and place on an even surface to cool.<\/li>\n<li>Repeat with the other tray.<\/li>\n<\/ol>\n<p>Filling<\/p>\n<ol>\n<li>Use a double boiler, or a pot with a bowl that fits on top. \u00a0Fill the larger pot with water so that the bowl, when placed in the pot, does not touch the water. \u00a0Place on the stove. \u00a0Bring water to a simmer.<\/li>\n<li>Beat the egg yolks and the sugar with an electric mixer in the bowl for 30 seconds. Place the bowl into the pot one and cook for 14-15 minutes. Stir every 2-3 minutes for a short while with a wooden spoon always scraping the sides and the bottom. Stir constantly, near the end. \u00a0The mixture should be thick and smooth. \u00a0Let cool.<\/li>\n<li>Beat the cooled egg yolk mixture with a mixer for 1 minute, then beat in the butter until light and fluffy. \u00a0Mix in the hazelnuts. \u00a0Use or refrigerate.<\/li>\n<\/ol>\n<p>White Frosting<\/p>\n<ol>\n<li>Whisk together the powdered sugar, oil and water 1 tablespoon at a time until you reach a thick but pourable consistency. \u00a0Set aside.<\/li>\n<\/ol>\n<p>Chocolate Frosting<\/p>\n<ol>\n<li>Microwave chocolate and oil in 20 second increments, whisking in between, until mixture is smooth. \u00a0Place in a plastic bag for piping.<\/li>\n<\/ol>\n<p>Assembly<\/p>\n<ol>\n<li>Place a cake round on serving platter or cake plate. \u00a0Spread with filling, then repeat with the remaining layers leaving the top one unfrosted. \u00a0Chill for 1 hour.<\/li>\n<li>Spread filling around the sides of the cake and chill again for 30 minutes.<\/li>\n<li>Pour some, but not all, of the white frosting on the top and smooth, then pipe 3 circles on the top and use a skewer to make a web design.<\/li>\n<li>Use more white icing to spread a thin layer around the sides of the cake.<\/li>\n<li>Press the hazelnuts into the sides of the cake.<\/li>\n<li>Chill for at least an hour before slicing and serving.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2015\/01\/27\/daring-bakers-mini-esterhazy-torte\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>Right now I am in a dreamy state after sampling and photographing this incredible\u00a0cake! \u00a0If you need a special dessert and you&#8217;re a hazelnut fan, you should seriously consider taking the time to whip this up. \u00a0You will thank me for the rest of your life.
