She challenged us to an easy, simple filled bun using no-knead dough.<\/em><\/p>\n<p>These siopao make a great meal. \u00a0You can make them ahead of time and all you need is a side of veggies and you&#8217;re good to go. \u00a0While these are traditionally steamed, this version is baked.<\/p>\n<p>As I said before, the meat is to die for. \u00a0So good. \u00a0For real. \u00a0My house smelled heavenly while it baked. \u00a0DO NOT leave out the star anise! \u00a0It&#8217;s subtle but adds so much. \u00a0I scored 2 in the bulk section of my grocery store for $0.20!<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2015\/02\/DSC_0739.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-7016\" a slow roast, chop it up and return it to the juice for an overnight mingling of flavor. \u00a0This may not be totally necessary, but I think it made the meat more flavorful and juicy. \u00a0Lots of fat will harden on top if you chill it, so remove what you can (this was tricky and disgusting for me so I gave up quickly) then slowly heat it just to get everything back to a nice juicy state. \u00a0Drain the meat and onion and reserve the juice. \u00a0It makes for a crazy good sauce later. \u00a0Also, a nice layer of fat will form on top of the reserved juice. \u00a0Remove it or pour the juice slowly into your saucepan and the fat should stay in the container. \u00a0Sorry for all the fat talk.<\/p>\n<p><!--more--><\/p>\n<p><a dough is super simple to make. \u00a0No kneading necessary and it was easy to handle.<\/p>\n<p>After dividing it up into 12 pieces&#8230;try to make them more equally sized than mine!<\/p>\n<p><a the full 3 pounds of meat and 2 batches of dough for a total of 2 dozen siopao. \u00a0I had just a little meat leftover, which really I should have used in some of the less meaty buns. \u00a0So 3 pounds is just about perfect for 2 batches. \u00a01 1\/2 pounds would be a good amount for 1 batch of buns, but all the roasts I saw at my grocery store were no smaller than 3 pounds. \u00a0You may have better luck at your market. \u00a0But even if I was going to just make a dozen buns I&#8217;d probably make extra meat. \u00a0I&#8217;m thinking it would be good served with some white rice, mixed in fried rice, served on baguette kind of like a bahn mi, or maybe even in a quesadilla or on a pizza. \u00a0Am I getting too ambitious? \u00a0I need to go make another roast now&#8230;<\/p>\n<p>I baked these early in the day and reheated them for dinner. \u00a0They are best eaten freshly baked since reheating them makes the buns crunchier, but they are still delicious. \u00a0I froze some of the ones I baked for later. \u00a0In hindsight I wish I&#8217;d frozen them unbaked and thawed and baked them later. \u00a0But again, I am sure they will still taste great. \u00a0The thing I really worry about is not having the sauce for those leftover buns! \u00a0I&#8217;ll have to experiment to make another sauce. \u00a0I think hoisin mixed with a little soy sauce Siopao<\/h3>\n<p><em>Ingredients<\/em><\/p>\n<p>Pork (makes enough for 2 batches\/24 siopao)<\/p>\n<ul>\n<li>3 pounds pork shoulder<\/li>\n<li>salt and pepper<\/li>\n<li>1 small yellow onion, thinly sliced<\/li>\n<li>4 cloves garlic, crushed<\/li>\n<li>1\/2 cup soy sauce, use reduced sodium if you have it<\/li>\n<li>3 tablespoons oyster sauce<\/li>\n<li>2 tablespoons sugar<\/li>\n<li>2 star anise<\/li>\n<li>1 tablespoon cornstarch for sauce<\/li>\n<\/ul>\n<p>Dough (for 12 siopao)<\/p>\n<ul>\n<li>1\/4 ounce (2 teaspoons) active dry yeast<\/li>\n<li>1-1\/2 cups warm water<\/li>\n<li>1 tablespoon sugar<\/li>\n<li>2 tablespoons melted butter<\/li>\n<li>1 teaspoon salt<\/li>\n<li>4 to 5 cups all-purpose flour<\/li>\n<li>1 egg, whisked, for egg-wash for the buns<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<p>Pork<\/p>\n<ol>\n<li>Preheat oven to 325\u00b0F.<\/li>\n<li>Season pork with salt and pepper and place in a dutch oven.<\/li>\n<li>Add in onion, soy sauce, oyster sauce, sugar, star anise and garlic.<\/li>\n<li>Cover and cook for 2 and 1\/2 hours. \u00a0Let cool before chopping up the meat. \u00a0Return to the pot and set sit for at least an the bowl of a stand mixer fitted with a dough hook and mix together. \u00a0Let sit for about 5 minutes until foamy.<\/li>\n<li>Add in 4 cups of flour and mix on low until combined, then on medium for 30-45 seconds. \u00a0Add a little more flour if dough seems especially sticky.<\/li>\n<li>\u00a0 Transfer to a greased bowl, cover with plastic wrap and let rise in a warm place for about an hour.<\/li>\n<\/ol>\n<p>Assembly<\/p>\n<ol>\n<li>On a lightly floured surface turn out the dough.<\/li>\n<li>Divide into 12 pieces. \u00a0Shape a piece into a circle about the size of your hand.<\/li>\n<li>Fill with a spoonful of the meat, gather the edges and pinch shut.<\/li>\n<li>Place on a baking sheet lined with parchment and repeat. \u00a0Cover and let rise for an hour.<\/li>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>Brush with a beaten egg before baking for 20-25 minutes.<\/li>\n<\/ol>\n<p>Sauce<\/p>\n<ol>\n<li>Heat sauce over medium heat in a small saucepan.<\/li>\n<li>In a small bowl whisk cornstarch and a little water to a smooth consistency.<\/li>\n<li>Once sauce reaches a simmer, let cook for 3-5 minutes. \u00a0Remove from the heat and whisk in the cornstarch mixture, whisking constantly. \u00a0If sauce isn&#8217;t as thick as you&#8217;d like return to low heat and whisk a little longer.<\/li>\n<li>Serve sauce with the
