{"id":708,"date":"2009-03-11T05:47:47","date_gmt":"2009-03-11T11:47:47","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=708"},"modified":"2009-03-11T05:48:43","modified_gmt":"2009-03-11T11:48:43","slug":"banana-nut-crumb-muffins","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/03\/11\/banana-nut-crumb-muffins\/","title":{"rendered":"Banana Nut Crumb Muffins"},"content":{"rendered":"<p>Sometimes cereal for breakfast gets old&#8230;in my opinion anyway. \u00a0My husband eats cereal every morning without fail and without complaints of boredom. \u00a0However, when bananas gets all black and mushy, the only option you have is to bake with them. \u00a0I have a tried and true recipe for banana bread with pecans and coconut that is incredible, but it doesn&#8217;t bake very well as muffins for some reason. \u00a0I found this recipe on allrecipes and just changed it by adding half a cup of chopped pecans. \u00a0The recipe yeilds a perfect dozen muffins. \u00a0My house smelled so wonderful yesterday even after they were packed away. \u00a0These muffins are easy and pretty good. \u00a0I recommend halving them, spreading some butter on each half and toasting them in the toaster oven or regular oven. \u00a0I love the crisp edges you get by warming them this way. \u00a0The cinnamon crumb topping is a nice addition to these muffins. \u00a0Enjoy!<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-711\" title=\"muffins\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/03\/muffins.jpg?resize=140%2C140\" alt=\"muffins\" width=\"140\" height=\"140\" data-recalc-dims=\"1\" \/>Photo and Recipe courtesy of Allrecpies.com<\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<table border=\"0\" cellspacing=\"0\" cellpadding=\"0\" width=\"100%\">\n<tbody>\n<tr>\n<td width=\"50%\" valign=\"top\">1 \u00bd cups all-purpose flour\u00a0\u00a0<\/p>\n<p>1 teaspoon baking soda<\/p>\n<p>1 teaspoon baking powder<\/p>\n<p>\u00bd teaspoon salt<\/p>\n<p>3 bananas, mashed<\/p>\n<p>3\/4 cup white sugar<\/td>\n<td width=\"50%\" valign=\"top\">1 egg, lightly beaten\u00a0\u00a0<\/p>\n<p>1\/3 cup butter, melted<\/p>\n<p>\u00bd cup chopped pecans<\/p>\n<p>1\/3 cup packed brown sugar<\/p>\n<p>2 tablespoons all-purpose flour<\/p>\n<p>1\/8 teaspoon ground cinnamon<\/p>\n<p>1-2 tablespoons butter<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>DIRECTIONS:<\/strong><\/p>\n<p>Preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 muffin cups, or line with muffin papers.<\/p>\n<p>In a large bowl, mix together 1 \u00bd cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Stir in pecans.\u00a0 Spoon batter into prepared muffin cups.<\/p>\n<p>In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in tablespoon butter until mixture resembles coarse cornmeal.
