Cream Cheese & Oat Bars

There isn’t much to say about these creamy, yet crunchy, sweet, yet salty and incredibly yummy bars except that they are terrific.  They are lovely and simple, and I will be marking this one in my recipe collection as one that is an all around pleaser and something I will probably make many times in the future.

I found this recipe on Bake or Break.  The title is what initially drew me to the post, but then I saw the photo and knew I really had to make these bars.

I used pecans instead of cashews, and simply left out the apple butter because the only jar I found at the grocery store cost $8, and I wasn’t about to pour $8 onto a crumb crust and cover it with cream cheese.  I am sure the apple butter would have been delicious, but they are wonderful without it as well.  Ben’s dad really liked them and suggested maybe raspberry jam instead of the apple butter, which I think would add a great tartness to this sweet bar.

The bottom crust is thick.  I would maybe take a little more of the crust mixture out and put it on top next time.  The original recipe calls for removing 1 1/2 cups of the mixture…I would take out 1 3/4 or even 2 cups.  After you bake the crust, you do not have to wait for it to cool completely.  I waited about 10 minutes before pouring on the cream cheese mixture.  If you plan to spread either apple butter or jam, you may want to wait a bit longer so that you don’t break the bottom crust while spreading.

The cream cheese filling is perfect as is; I wouldn’t change a thing.  I did use one low-fat package of cream cheese, and am sure using all low-fat would be fine.  So, I guess I did change one thing.

We ate these while they were still a little warm, and then the next day after chilling in the fridge.  I liked them both warm and cool, although the butter is chilled so much straight from the fridge that I feel it needs a few minutes to warm up before the flavor of the butter can really be appreciated.  Man, I love butter.

Brown Butter Toffee Blondies

Martha Stewart offers a “Cookie of the Day” email that I have been getting for over a year now.  I have made a few of these cookies, but rarely do the cookies just scream out and beg for me to make them.  These brown butter blondies, however, were something I just couldn’t resist.

Browned butter is something special.  You can smell the nuttiness as it begins to brown in the pan, and the rich flavor that it gives to baked goods is tremendous.  This brown butter frosting is delicious, and worth a try on the pumpkin cookies, on vanilla cupcakes, and especially nice on pumpkin cake or bread.

These blondies are rich, and so your sweet tooth can be satisfied with a small square.  But, if you’re like me, you justify having a second small square since you only had one small piece to begin with!  Make sure to let these cool completely before cutting and removing from the pan.  They will seem a bit gooey in the center after 40 minutes of baking, but resist the urge to keep baking.  Just let them sit and be patient.  I replaced the walnuts called for in the original recipe with pecans, but everything else in the recipe remained as written.  Here is the link to Martha’s recipe.

Brown Butter Toffee Blondies

Ingredients

  • 1 1/4 cups (2 1/2 sticks) unsalted butter, plus more for pan
  • 2 1/4 cups all-purpose flour, plus more for pan
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 2 cups packed light-brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 2 1/2 teaspoons pure vanilla extract
  • 1 cup chopped pecans
  • 1 cup toffee bits

Directions

  1. Preheat oven to 350 degrees. Butter a 9-by-13-inch baking pan.
  2. In a saucepan over medium heat, cook the butter until it turns golden brown; remove from heat, and let cool. Whisk together flour, baking powder, and salt.
  3. In the bowl of an electric mixer, combine browned butter and both sugars; stir with a wooden spoon until combined. Attach bowl to mixer; add eggs. Using the paddle attachment, beat on medium-high speed until light and fluffy, about 3 minutes. Add vanilla, and beat to combine. Add flour mixture, walnuts, and toffee bits. Mix until thoroughly combined, and pour into prepared pan.
  4. Bake until a cake tester inserted in the center comes out clean, 35 to 40 minutes (do not overbake). Transfer to a wire rack to cool completely before turning out of pan onto a cutting board. Cut blondies into 3-inch squares. Blondies can be stored in an airtight container at room temperature up to 3 days.

Blueberry Lemon Cheesecake Bars

Summer is coming, and summer calls for light, refreshing summer-y desserts.  These lemon blueberry cheesecake bars blend the perfect amount of sweetness, tartness, richness, creaminess and crunchiness. 

You could probably use any berry with good results.  I love the combination of lemon and blueberry, so these are my kind of dessert bar.  They are very sturdy, so they would travel well.  Bring them on your next picnic!  Enjoy.

Blueberry Lemon Cheesecake Bars

Blueberry Filling:

  • 1 cup blueberries, chopped
  • 1/4 cup orange juice
  • 2 tablespoons granulated sugar
  • 2 teaspoons cornstarch

 Crumb Mixture:

  • 1 1/4 cups all-purpose flour
  • 3/4 cup old fashioned oats
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup butter

 Cream Cheese Filling:

  • 1 (8-ounce) package cream cheese, softened
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon grated lemon peel

 Directions

  1. Preheat oven to 350°F (175°C). Lightly grease the bottom of a 13 x 9 x 2-inch pan. Set aside.
  2. In a small saucepan combine blueberry filling ingredients; stir until corn starch is dissolved. Cook over medium heat, stirring constantly until thick and bubbly, about 5 minutes. Set aside to cool slightly.
  3. In a large bowl, combine all crumb mixture ingredients except butter; mix well. Using a pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Reserve 1 cup crumb mixture for topping. Press remaining crumb mixture firmly in bottom of prepared baking pan. Bake for 10 minutes.
  4. In a medium bowl mix together the cream cheese filling ingredients with electric mixer on medium speed until well blended; pour into baked crust.
  5. Spoon blueberry filling over cream cheese filling, lightly swirl with knife.
  6. Sprinkle reserved crumb mixture over filling.
  7. Bake 20 to 25 minutes or until lightly browned. Cool completely, then chill. Cut into bars.

Peanut Butter Cheesecake Toffee Brownies

A few weeks ago I caught the end of Oprah while on the treadmill at the gym.  Her guests were the contestants of the 2010 Pillsbury Bake-Off, and at the end of the show they revealed the winner of the $1,000,000 grand prize.  This was the winning recipe, Mini Ice Cream Cookie Cups.

These little treats look delicious!  And I know they must taste good as well.  How could they not?  The ingredients have no option but to create perfect sugary wonder!  Sugar cookie dough made into cups, dipped in chocolate and nuts, a spoonful of fruit jam in the bottom, topped with ice cream and fresh raspberries on top.  My problem with this is that it won $1,000,000 dollars.  They are somewhat creative I guess, but very little of this recipe is homemade or imaginative.

Were there no better recipes than this in the contest?  Seriously?  Who judges this contest?  A 10 year old who just LOVES ice cream sundaes?  Am I being harsh?

I got on the Pillsbury website and decided to go on a mission to look at other recipes that were contenders in the 2010 Bake Off. These brownies were among the finalists, and while they do use a brownie mix, there is more to these brownies than just a dressed up mix topped with ice cream.  On top of the brownie layer is spread a layer of sweet cream cheese and peanut butter goodness.  To finish things off, a layer of melted chocolate  is spread over the brownies and then sprinkled with toffee pieces.

Without having made the cookie cups, I can’t say for sure that these are better or more worthy of the prize, but they are very tasty.  Enjoy in small portions with a glass of milk because they are rich and quite chocolate-y.

Peanut Butter Cheesecake Toffee Brownies

Ingredients

  • 1 box (19.5 oz) Brownie Mix
  • ½ cup Vegetable Oil
  • ¼ cup water
  • 2 eggs
  • 1 package (8 oz) cream cheese, softened
  • 1 can (14 oz) Sweetened Condensed Milk
  • ½ cup Peanut Butter
  • 1 bag (8 oz) toffee bits
  • 1 cup milk chocolate chips
  • 3 tablespoons whipping cream

Directions

1. Heat oven to 350°F. Lightly spray 13×9-inch pan with cooking spray.

2. In medium bowl, stir brownie mix, oil, water and eggs 50 strokes with spoon until smooth. Spread batter in pan; set aside.

3. In large bowl, beat cream cheese with electric mixer on medium speed until fluffy. Add milk and peanut butter; beat until smooth. Stir in 1 cup of the toffee bits. Spoon mixture over batter; spread evenly.

4. Bake 30 to 40 minutes or until cheesecake layer is set and edges are light golden brown. Cool on cooling rack 30 minutes. Refrigerate 40 minutes.

5. In small microwavable bowl, microwave chocolate chips and cream uncovered on High 40 to 60 seconds or until chips are melted; stir until smooth. Spread over cheesecake layer. Sprinkle with remaining toffee bits. Cool completely, about 1 hour. For brownies, cut into 6 rows by 6 rows. Store covered in refrigerator.

Oatmeal Crispy Bars

One of my favorite cookbooks is The Pastry Queen by Rebecca Rather.  I won’t say any more about it except for this: If you don’t own a copy, as I have said before, go buy one…now!

I made these quick and easy oatmeal cookie bars this past weekend when our small group from church came over.  Originally I was going to make brownies from a mix since that would not require too much in the ways of time or effort on my part.  I just did not feel like spending any more time than I had to in the kitchen that day.  When I came across this recipe and realized how simple they would be, I had no choice but to make them.  Homemade is always better than a box.

The ingredients and preparation for these crispy oatmeal bars are both incredibly simple and easy.  You probably have everything you need in your kitchen.  The prep could be done with your eyes closed.  They bake for a measly 20 minutes and are ready to enjoy or drizzle with chocolate soon after making their exit from the oven.  Easy and delicious.  It doesn’t get much better than that.

I melted my chocolate chips in the microwave in a Pyrex measuring cup.  Zap the chips on high for 30 second intervals, stirring in between until the chips are smooth.  I didn’t do the best job of drizzling.  A few spots were more globbed on than drizzled.  Another good idea is to chill these after drizzling the chocolate to let them harden up a bit before removing them from the pan and plating them.  A few of my crispy oatmeal treats broke when I took them out, which is a blessing in disguise because that means more for me!  These treats are a simple and humble cookie, and they are definitely worth the time and energy it takes to make them.

Oatmeal Crisps

Ingredients

  • 1 stick butter
  • 1/2 cup brown sugar
  • 1 tablespoon corn syrup
  • 1 teaspoon vanilla
  • 2 cups old fashioned oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sweetened shredded coconut
  • 1/2 cup bittersweet chocolate chips (if desired)

Directions

  1. Preheat oven to 350 F
  2. Spray a 9×13 inch pan with cooking spray
  3. Melt butter, brown sugar and corn syrup in a saucepan set over medium heat.  Stir 1 to 2 minutes, until brown sugar dissolves.  Remove the pan from the heat and stir in vanilla.
  4. In a medium bowl stir together oats, baking powder, salt and coconut.  Add butter mixture and stir to combine.
  5. Spoon the batter into the pan and with fingers coated in cooking spray, press the batter evenly into the pan.
  6. Bake for 20-25 minutes.  Cool for 20 minutes and cut into bars.
  7. Melt the chocolate chips and drizzle over the bars.  Chill in the fridge for a few minutes to let the chocolate harden.

Lemon Squares

This afternoon I made these lemon squares from Eatingwell.com.  My mom makes the most incredible lemon bars.  I could probably eat an entire pan if no one stopped me and if I wouldn’t go into a sugar and butter coma afterward.  When I came across this recipe I had to see how it compared to my mom’s butter laden bars with tart and luscious filling.

Lemon bars must have a buttery, crunchy base, a smooth, lemony filling and a crunchy, sugary top.  I was hopeful that these bars would measure up.  There is a bit of butter in the crust to provide the richness, and the use of lemon juice and zest in the filling makes these bars incredibly flavorful.  The recipe calls for white whole wheat flour, but since all I had was regular whole wheat I opted for plain old all purpose flour.  I probably could have done half all purpose and half whole wheat, and will probably try that next time.

The verdict:  Yum.  Crunchy, sweet, buttery goodness topped with incredibly tart, sweet gooey lemon and a crunchy topping sprinkled with powdered sugar.  I will definitely be making these again.  Next time I will try to get some white whole wheat flour or use a mixture of all purpose and whole wheat.

Pistachio and Almond Baklava

Happy National Pistachio Day!  Ok, so I missed it by about 11 days but better late than never.  In belated honor of this wonderful holiday I made this baklava Sunday night to accompany a Greek meal I made with my mother and sister-in-law who came to visit along with Ben’s Grandma Betty.  Having company is wonderful, and having lovely company is even better.

Baklava is an impressive looking dessert.  It’s crisp sweet layers of dough encasing crunchy, salty nuts all enrobed in a honey syrup is simply irresistible.  The best part is that baklava is not as hard as it seems.  The phyllo dough isn’t hard to work with as long as you keep it covered with a moist towel in between removing sheets for layering.

You can use any combination of nuts in the baklava.  Pistachios seem to be traditional, but I have seen recipes that use all kinds of nuts.  I like the combination of pistachios and almonds here.  The amount of butter you use may seem like a lot, but you need it to get all the layers to stick together properly.  Give in.  Use the butter, and love the butter.  You know you want to.

Pistachio and Almond Baklava

Ingredients
  • 1 (16 ounce) package phyllo dough
  • 8 ounces chopped roasted almonds
  • 6 ounces chopped roasted pistachios
  • 1 cup butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1 cup water
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup honey
Directions
  1. Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9×13 inch pan.
  2. Chop nuts and toss with cinnamon and cardamom. Set aside.
  3. Unroll phyllo dough.  Cover phyllo with a dampened cloth to keep from drying out as you work.
  4. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 4 tablespoons of nut mixture on top.
  5. Top with two sheets of dough, brush with butter, then layer with nuts after you have 6 layers of phyllo. The top layer should be about 6 – 8 sheets deep.
  6. Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan.
  7. Bake for about 50 minutes until baklava is golden and crisp.
  8. Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for 15-20 minutes.
  9. Remove baklava from oven and immediately spoon sauce over it. Let cool.

Daring Bakers: Nanaimo Bars

First thing’s first…I cheated.  I did not make the graham wafers.  I am a terrible person.  I promise to make them another time, pinky promise!  I just did not have the time.  Well, that is only partially true.  I could have had the time if I’d actually looked at my January commitments and planned ahead.  This last week of January finds me in San Diego for 3 days for a conference for work, two days at home in Amarillo and then I head to Austin for 4 days for my sister’s baby shower and grandpa’s 90th birthday celebration.  AND I have to somehow fit in the baking of a few dozen cut-out bird cookies for the shower.  When it rains it pours, people.

The January 2010 Daring Bakers’ challenge was hosted by Lauren of Celiac Teen. Lauren chose Gluten-Free Graham Wafers and Nanaimo Bars as the challenge for the month. The sources she based her recipe on are 101 Cookbooks and www.nanaimo.ca.

Now you’re thinking, “She’s a double cheater!”  You’re right.  I didn’t even consider trying to make anything gluten free.  Again, the lack of time and my laziness got the better of me!  Also, I think I like gluten.  It sounds like glutton…

I had to make the bars before I left for sunny (sorta) San Diego in order to get them done before the craziness began.  When you’re a cheater like me and you use store-bought graham crackers these bars come together very quickly.  You have to give them some time in the fridge before enjoying them, but other than that they are quick and simple.

After chilling in the fridge they have a beautiful hard chocolate-y layer which innocently hides the sweet soft vanilla layer beneath it.  I was not thinking about this HARD chocolate layer when I took a knife to these bars.  All, or almost all, of the chocolate cracked and popped off the top of the bars.  I should have waited a few minutes after taking them from the fridge to let the chocolate soften a bit and adhere to the creamy layer.  You live, you learn.

Even with the shattered chocolate layer, which I managed to somehow replace on a few pieces, these were very delicious.  I will be making these again.  Delicious.

Nanaimo Bars
Ingredients:

Bottom Layer

  • 1/2 cup (115 g) (4 ounces) Unsalted Butter
  • 1/4 cup (50 g) (1.8 ounces) Granulated Sugar
  • 5 tablespoons (75 mL) Unsweetened Cocoa
  • 1 Large Egg, Beaten
  • 1 1/4 cups (300 mL) (160 g) (5.6 ounces) Gluten Free Graham Wafer Crumbs
  • 1/2 cup (55 g) (1.9 ounces) Almonds (Any type, Finely chopped)
  • 1 cup (130 g) (4.5 ounces) Coconut (Shredded, sweetened or unsweetened)

Middle Layer

  • 1/2 cup (115 g) (4 ounces) Unsalted Butter
  • 2 tablespoons and 2 teaspoons (40 mL) Heavy Cream
  • 2 tablespoons (30 mL) Vanilla Custard Powder (Such as Bird’s. Vanilla pudding mix may be substituted.)
  • 2 cups (254 g) (8.9 ounces) Icing Sugar

Top Layer

  • 4 ounces (115 g) Semi-sweet chocolate
  • 2 tablespoons (28 g) (1 ounce) Unsalted Butter

Directions

1. For bottom Layer: Melt unsalted butter, sugar and cocoa in top of a double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, nuts and coconut. Press firmly into an ungreased 8 by 8 inch pan.
2. For Middle Layer: Cream butter, cream, custard powder, and icing sugar together well. Beat until light in colour. Spread over bottom layer.
3. For Top Layer: Melt chocolate and unsalted butter over low heat. Cool. Once cool, pour over middle layer and chill.

Dark Chocolate Marshmallow Crispy Bars

When things start to fall on you when you open the pantry door, you know some action must be taken.  A box of Rice Krispies came sliding out of the pantry yesterday while I was trying to reach something else that was stashed underneath it.  As fate would have it, my Martha Stewart cookie of the Day recipe was Crispy Chocolate Marshmallow Treats.  The ingredient list is simple and short: butter, marshmallows, cocoa, rice krispies and semi-sweet chocolate.

I wasn’t expecting these to be anything special, but they were so much better than a normal rice krispy.  These are more adult in flavor, and not as gooey and sticky as the original.  I used Hershey’s dark cocoa and drizzled semi-sweet chocolate on top.  The chocolate makes them decadent, dense and delicious.

Sweet Saturday: Candy Bar Blondies Experiment

Last week I made 3 batches of blondies hoping to create something irresistibly delicious.  I originally planned on making a Candy Bar Blondie with a variety of candy bars chopped into chocolate chip sized pieces.  I used a basic blondie recipe and then just replaced the chips and buts with the candy pieces.

reeses4Attempt #1 resulted in a yummy treat filled with chopped Snickers, Rolos, Reeses and Twix.  The problem was that the edges rose up on the sides and stayed there after the blondies cooled creating a sunken and sad looking baked good.  A blondie sinkhole.  I used a metal 8×8 inch pan which I’d greased.  The middle of the blondies were incredibly gooey, but the edges were hard and caramelized.  Hmmm.  I decided to try again.

Attempt #2 used the same combination of candy bars, sans the Twix because I ran out.  I tried to bake this one in a glass pan which I greased and floured.  I assumed the problem was my baking pan preparation.  Same basic recipe.  New pan.  Same problem.  Intriguing…and a tad bit frustrating.
